Winemaker: Cave B Estate Winery Winemaker Alfredo "Freddy" Arredondo’s winemaking philosophy is one of natural, minimal-interventionist production. Arredondo is a graduate of the Walla Walla Community College Institute for Enology and Viticulture. Arredondo’s winemaking experience includes working as a cellar master at Cougar Crest Winery in Walla Walla. A former professional chef, Arredondo brings a deep understanding of the beauty of wine and food pairing to his winemaking process. His great passion is marrying Cave B wine and its companion brand SageCliffe dynamically with foods. Vineyards: The grapes for each of Cave B Estate Winery’s labels are cultivated in the 30 Cave B Estate Vineyards. The wines are made without the use of enzymes, and no addition of sugar (chaptalization) or acid (acidulation) is ever employed in the winemaking process. The wines are made from only the grapes themselves, along with yeast cultures and nutrients. The purity of the wine produced is the winery's hallmark and it is precisely this element which maximizes the expression of the SageCliffe terroir. Wines: Cave B and SageCliffe wines include red, white and rose varietals including award-wining Cabernet Sauvignon, Chardonnay, Malbec, Merlot, Riesling, Semillon, Syrah, Tempranillo and Viognier. Cave B Estate Winery has received recent recognition in the 2010 Seattle Wine Awards.
